With experience across respected kitchens including Horto, Norse, and Crafthouse, Simon has developed a style that balances fine dining precision with the pace and consistency required in a high-energy environment. Since opening, his menus have become known for bold flavours and playful creativity, with standout dishes such as Hoisin Duck Doughnuts, Coronation Stuffed Boneless Chicken Wings, and Tempura Lobster Claw quickly becoming guest favourites.
